Recipe swap follow up

Sadly only one kind person participated in my recipe swap...so I am going to post her recipe and one of mine (my moms) just so I can have some closure from the original post. If you're interested click here

I did get a lot of feedback - people saying they would love to post a "sweet treat" so I will take another crack at it now:

If you want to post a favorite Holiday Sweet Treat Recipe please email it to me or post it in the comments and I will create a sweet treat soon.

I know I am a glutten for punishment - but I have faith that my friends and their sweet toothes will come through on this one

Sorry I let you down. I too only had sweet recipes that I thought were worth sharing.I tried a new dinner recipe last night and got a thumbs up from all three boys..that is rare. Let me know if you would like it.

Not necessarily a holiday treat, but is really good!

Fresh Lime Trifle

1/3 C butter
1 C sugar
2/3 C FRESH lime juice
5 egg yolks, beaten
2 T grated lime peel (about 4 limes)
1 container whipped topping
1 angel food cake, torn into bite size pieces.
Melt butter in medium sauce pan. Blend in sugar. Stir in lime juice and 1/4 C water. Whisk in egg yolks. Cook and stir over medium0low heat about 18 minutes or until thickened. Remove from heat; cool slightly. Stir in lime peel. Cool completely.
Place whipped topping in medium bowl. Gently fold in lime mixture. Layer 1/3 of the cake pieces in trifle dish or clear serving bowl. Top with 1/3 of lime mixture. Repeat layers twice. Chill at least 2 hours before serving. Serves 12.

Double Layer Pumpkin Pie

4 oz. cream cheese, softened in microwave 15-20 secs.
1 Tbsp milk
1 tub (8oz) Cool Whip, thawed
1 prepared graham cracker crumb crust
1 cup cold milk
1 can (16oz) pumpkin
2 pkg. (4 svg sz) Jello Vanilla flavor instant pudding & pie filling
1 tsp. cinnamon
1/2 tsp ground ginger
1/2 tsp gound cloves

Mix cream cheese, 1 Tbsp milk & sugar in lg bowl with wire wisk until smooth. Gently stir 1 1/2 cups of the cool whip. Spread onto the bottom of crust.

Pour 1 c milk into large bowl. Add pumpkin, pudding mixes & spices. Beat with wire whisk until well mixed.Spread over cream cheese layer.

Refrigerate 4 hours or until set. Garnish with remaining whipped topping. Makes 8 svgs.

Forgotten Cookies

2 egg whites
3/4 cup sugar
1 tsp. vanilla
pinch of salt
1 (6oz) pkg chocolate chips
1/2 cup chopped pecans

Preheat oven to 350 degrees. Beat egg whites until very stiff peaks. Add sugar, and continue beating. When mixture is smooth, use a spoon to fold in vanilla, salt, choc. chips, and pecans. Spoon by teaspoonfuls on a well greased/floured cookie sheet. Put in the oven - count to 30 slowly, turn the oven off. DO NOT OPEN THE OVEN DOOR!!!! Then leave the cookies in for 6-8 hours or overnight (get it...FORGET about them). They are like a meringue cookie! Delish. They simply melt in your mouth.

Snickers Pie (low cal)


Ingredients

1 1/2 cup softened chocolate ice milk

1 cup Light Cool Whip, thawed

1 package sugar-free instant pudding mix, chocolate

1/4 cup crunchy peanut butter

3 ounces grapenuts

Directions

Spray an 8-9 inch pie pan with Pam.

In a large bowl, combine ice milk and Cool Whip.

Blend in remaining ingredients. Pour in pan. Freeze at least 2 hours.

If you dont want the low cal version, use non-diet ingredients and pour into a chocolate crust. Either way - totally yummy!
